A meat-consumer myself, I found the addition of fish sauce to bring the level of umami that the people wanted. If ya got an immersion blender, I would recommend using that to slurry up the mushrooms, as my Ninja didn't get the job done. Ended up adding some fish sauce at the end for the extra funky flavor and a dash of rice wine vinegar to brighten it a bit. This was incredible, and came together in less than 30 min. The blending step is perfect to achieve a thick, milky broth.

I added miso, chili-garlic sauce and a couple cloves of garlic to the broth. I found it a bit thick after blending, so I thinned it out with some vegetable broth as well.
Side note, I make my own ramen noodles and I found the best way to serve the noodles and broth is to quickly boil them, drain, and then toss them in some toasted sesame oil to prevent sticking. I place them on a plate in the center of the table and then everyone can build their own bowl of ramen with however much ramen, broth, and toppings they want. I'm confused, did I make the same recipe as everyone else?

It was very flavourful with a hint of heat but not so much so that it was at all uncomfortable. I didn't have kombu so instead omitted that from the recipe completely and added cut nori sheets on the final dish; it tasted wonderful how it was so if you don't have it, don't worry! Would definitely make it again!
